Healthy 80 calorie strawberry oatmeal cookies

Every time I pass by the cookie shop in Old Town, I can’t help but stare longingly at the giant ice-cream filled sandwiches. I have been craving one so badly but didn’t want to give up the room in my daily budget. Then I found this amazing recipe on Amy’s Healthy Baking for strawberry oatmeal cookies and it sparked an idea.


What if I made cookie sandwiches for under 100 calories!?! I took the base recipe, removed a few ingredients to make it lower in calories, and bought Lite Cool Whip. In under 30 minutes, I had yummy ice-cream cookie sandwiches that didn’t wreck my day.

Ingredient Amount Calories
Almond Flour 0.5 320
Oats 1.5 375
Baking Powder 1 tsp 0
Salt Pinch 0
Cinnamon 1 tsp 0
Vanilla extract 2 tsp 0
Egg 1 70
Lite Syrup .5 Cup 200
Strawberries .5 Cup 23
Chocolate Chips, Semi-Sweet Toll House 3 tbsp 250
 Per Cookie (with a batch of 15)   83

Preheat the oven to 350

Chop strawberries into small chunks and set aside

I used about 6 medium sized strawberries in this batch. First, slice them length-wise and then turn and chop into small chunks.

Combine dry ingredients

Measure the ingredients carefully so you stay on track with the calories! 

Mix in wet ingredients

The batter seemed very moist at first, but the baked cookies turned out soft and yummy. 

Fold in strawberries and chocolate

Try not to crush the strawberries or your batter will become too wet. Gently fold until all the strawberry bits and chocolate chips are evenly incorporated.

Use 1TBS scoop to form dough balls

I was able to make 15 cookies with a little extra to lick the bowl. This dough does have a raw egg, so beware if you are a cookie dough monster like me!

Bake for 15 minutes

Pull them out and allow to cool. They will be soft at first, so let them sit for at least 5 minutes before you try to move them. You can then store them in the fridge for 3-5 days (if they last that long!)

These cookies are great on their own, but if you want a cookie sandwich simply top with 1TBS of Lite Cool Whip. I threw an additional strawberry on top for extra sweetness. You can eat your sandwich open-faced to save a few calories. If you want a full sandwich, remember to add an additional 80 calories (which is still a GREAT treat).
